Carrot Souffle Recipe

You will Need the Following:

· 1/2 Cup Sugar

· 2 Tablespoons Flour

· 1/2 Teaspoon Baking Powder

· 1 Teaspoon Cardamom (Ground)

· 1/2 Teaspoon Nutmeg (Grated or Ground)

· 2 Pounds Peeled Carrots

· 4 Tablespoons Butter (1/2 Stick)

· 1 Egg

· 1 Teaspoon Vanilla Extract

Kids Love It Carrot Souffle Cooking Instructions

1. Preheat the oven to 350.

2. In a large pot, put the carrots & enough water to cover them with one inch of water.

3. Bring to a boil.

4. Cook until the carrots are completely tender (about 45 minutes), so they are breaking up.

5. When the carrots are cooked, drain them & put in a mixing bowl with all other ingredients.

6. Mix with beaters until all ingredients are combined.

7. Pour into a casserole or soufflé dish.

8. Bake for 30 minutes or until the top is lightly browned.

Preparation time: 10 minutes

Cooking time: 75 minutes

Kids Love It Carrot Soufflé

Not your typical Indian flavors, this soufflé is sweet and creamy with a pinch of fresh ground nutmeg—a favorite even for those who thought they didn’t like carrots!

It’s a first for Modern Day Masala!  We are discontinuing one of our mixtures and because we know you love it so much, we’re posting the recipe so you can still make it at home.  Just be sure to purchase whole cardamom (and grind it yourself) and whole nutmeg (a microplane works great for grating) so that you have the same fresh taste you found in our spice mixture.  Enjoy!
